Facing climate challenges and the relocation of brewing sectors, hops represent a strategic lever. This project explores innovative cultivation and processing methods, adapted to local realities.
HOPS
EVALUATION OF HOPS DURING BREWING
Hops will be used during the beer production process at a 1 hl scale. Their integration methods in the beer (hot side and/or cold side) will depend on the analytical results of the hops. The trials will make it possible to create descriptive sheets for the hops which will allow brewers to know their bittering and aromatic characteristics with usage recommendations.
The brewing trials will enable in particular to:
- Test the use of hops at a 1 hl scale
- Adapt their integration into the brewing process
- Analyze their bittering and aromatic characteristics
BARLEY MALTS
EVALUATION
OF BARLEY MALTS
DURING BREWING
Brewing trials on the selected barley varieties that will have been malted will be carried out in order to evaluate their impact on the process (mash and beer filtration, fermentation, etc.). Certain key parameters will also be analyzed in order to fully evaluate the brewing quality of the malts.
The brewing trials will focus in particular on:
The impact of malts on the brewing process
- Mash filtration
- Beer filtration
- Fermentation
The analysis of key parameters to characterize the brewing quality of malts
These trials will make it possible to better qualify the malts derived from the selected barley varieties and to evaluate their brewing suitability under different conditions.
